This is not a cookbook, though there is a lot of cooking included, from the time of the first fires, boiling water and cooking in the stomach of animals, up to the modern utensils and devices of today. It is not an academic dissertation, although the research is evident, extensive, and supported with citations dating back to the earliest literature and continuing up to the most recent studies. For those who are interested in where this or that technique originated, who first ate this or that recipe, where this or that tradition came from, this is your volume. It is too much to sit and read at a sitting, or even at a few sittings. It is best sampled by following your interests one subject at a time, over a long period of time. Fascinating and thoroughly interesting.

Very interesting, but so much to digest, please excuse the pun. I am a speed reader, but in this case I can only read a few pages at a time. Still, it is by my side constantly. And wow, there are so many facts, I never knew..Excellent!

This is a most comprehensive book, full of tasty bits of information and insight. Do not try to read all at once - it's most useful to either use the table of contents for specific times in history or foods, etc., or read one chapter at a time with a good red wine, Stilton cheese and whole grain crackers. Highly recommend this book if you love food, politics, history and people! This is not for beach reading. It's a keeper.

I read a lot of books about the history of food and cooking, and this is one of the best I have ever read. I first got a copy from the library, but then I realized I would be reading it again and again, so I bought it. Translated from French, it gives a French perspective on practically everything we eat. Lots of history, and lots of interesting facts. Because it is a very large book, I keep it on my breakfast table and read a little bit every morning. I recommend this treasure to anybody who wants to know why we eat what we eat. I would give is six stars if possible.
